Phil Lifsey's journey into chocolate-making began with a simple curiosity in his kitchen. Through experimenting with select ingredients, he crafted a unique chocolate using refined coconut oil—chosen specifically for its ability to create an ultra-smooth, melt-in-your-mouth texture without imparting any coconut flavor.
As Phil began to share his chocolate with family and friends, his family faced a three-year battle with a major health issue. In this journey, their family discovered a deepened faith.
In this three-year journey, Phil also made hundreds of batches of chocolate, sharing boxes with doctors, nurses, hospital staff, pharmacy personnel, and occasionally family and friends. These boxes were Phil’s love language for the many who stood steadfast with them during this journey.
Today, you will see Phil smile should he see you experiencing chocolate as it should be. Just put a piece of Trew Chocolate in your mouth, let it slowly melt, and savor the exploding flavors.
Indeed, during this journey, many told Phil “This is the best chocolate I have ever had”. Many also said “You need to sell this. Others should experience this taste as well.”
So Trew* Chocolate is born, and the company begins.
*A footnote regarding the company name. Trew is a Welch family name within Phil’s lineage. And an appropriate homonym … for Trew Chocolate is True Chocolate.

We use refined coconut oil to achieve a silky-smooth texture without any coconut flavor, ensuring the rich taste of our chocolate shines through.
Each batch is meticulously made by hand, reflecting our commitment to quality and attention to detail.
Our chocolates are designed to be savored straight from the refrigerator, offering a cool and satisfying experience. Since coconut oil melts at 76 degrees, our chocolates must be refrigerated.

Our chocolates are made with coconut oil instead of traditional cocoa butter, which gives them a rich, smooth texture. But that also means they start to melt at room temperature—so they’re best enjoyed straight from the fridge!
